THC-Infused Ice Cream

There are infinite ways to flavor ice cream, from simple vanilla and chocolate, to fruity flavors like strawberry or blueberry, to sweet cream with mix-ins like cookies, nuts, caramel and toffee. In my house, we usually make vanilla ice cream because it can be customized when served by simply adding toppings.

The addition of egg yolks can boost the flavor and richness of your ice cream but at the same time requires more time to make and, in my opinion, produces a heavier consistency that isn’t my favorite during hot summers. Think Italian Gelato, which generally is softer textured but richer and heavier on the stomach. 

This recipe has no eggs and takes about 3-5 minutes of work to produce, with the help of an ice cream machine like the one pictured. This particular machine cost $40 at Walmart and is a good standard for simple homemade ice cream production.

This recipe can be adapted for many different flavors, blend strawberries or blueberries with the milk before adding to the machine, or add your favorite cookies, nuts or candies at the end of the mixing/freezing process, or simply add your favorite toppings when serving. 

I like to squeeze a lemon over the top of the ice cream when I serve it. The juice fills the small cracks and freezes, producing small pockets of refreshing lemony acidity. If you’ve ever had a dreamsicle, you will recognize this flavor combination. Add a touch of olive oil as well and you have a Mediterranean flavor bomb that most Americans have never heard of.

*When buying heavy cream, try to find one with no additional thickeners like carrageenan or guar gum as they will negatively affect the texture of your final ice cream.

Sweet Cream Base Ingredients

• Heavy Cream 400g

• Milk 250g

• Sugar 175g

• THC Tincture

• 1 tsp Vanilla extract

Instructions

1. Make sure your ice cream machine is fully chilled. (24 hours in the freezer minimum)

2. Mix the cream, milk and sugar together in a bowl to dissolve the sugar. Don't mix so vigorously that you create foam.

3. Add in your THC tincture and flavoring such as vanilla.

4. Start the ice cream machine and add your mixture to the mixing bowl slowly to avoid splashes.

5. Let run for about 15 minutes until fully thickened. 

6. If adding any nuts or other solid ingredients, add them now.

7. Once any add-ins are mixed, turn off the machine and let sit for about 10 minutes to chill further.

8. Spoon out the mixture into a chilled freezer proof container and place in the freezer overnight.
