Infused Ginger Snap Cookies



I don't know about you, but I've been dreaming about cookies. Now is the perfect time to make a bunch of cookies, get all your friends together, and have a cookie exchange! What better way to participate than to arrive with infused ginger snap cookies? They are by far one of my favorite cookies, chewy and crunchy with an alluring spice. They're pretty simple to bake, and they make the house smell amazing. This recipe really gets that spicy scent in the air, and has a nostalgic way of making you feel like it's the holidays. I wish you could smell it! Guess you'll have to make it!


Before you begin, remember to drop by your favorite dispensary and ask for the Chronic Health tincture, sativa or indica, whatever you're feelin'. It's about time to pop on one of your favorite movies for the season, and partake in those Christmas festivities. Enjoy, my friends! Merry Christmas and Happy New Year!

Yield: 36, 11mg cookies

Prep Time: 30 minutes

Bake Time: 11-14 min

Tools to make this recipe: mixer, cookie sheet, parchment paper or silicone mat, measuring cups, measuring spoons, spatula, scoop or tablespoon.



¾ cup butter, softened

¾ cup + 2 Tbsp sugar

1 oz bottle Chronic Health Tincture, 400mg

1 large egg

2 cups flour

¼ tsp salt

1 tsp baking soda

1 tsp cinnamon, ground

1 tsp ginger, ground

1 tsp cloves, ground

½ cup sugar, for coating cookies


Instructions

  1. Think about how medicated you would like for the cookies to be. This recipe makes 3 dozen cookies at 11 mg for each cookie. For this recipe, I use a whole bottle of Chronic Health tincture, 400mg. Consider what dosage is right for you before you decide if you want to double the amount of tincture for your recipe. If you do want to increase your dosage, use 2 bottles Chronic Health tincture and lower your sugar down to ¾ cup. Make a note of what you decided.

  2. Preheat the oven at 350°f, and prep your cookie sheets with parchment or silpat. You may have a small potency loss because of the higher temperature, but you want the cookie to crack. If you don't mind, bake at 325°f.

  3. Mix together Chronic Health tincture, molasses, and sugar until sugar is evenly coated. Cream the sugars and butter in a large mixing bowl until light and fluffy. Next, add the egg and mix until almost incorporated. Mix together your dry ingredients in a separate bowl. Slowly add flour mixture until a dough forms.

  4. Scoop your dough into balls, about the size of a heaping tablespoon, and as equal as possible. Roll cookie balls in sugar before baking. Bake for 12-15 minutes, until you start to see the tops of the cookies crack open. Remove from the oven to cool.

  5. Relax and enjoy.


Notes:

Dairy-free: Substitute Country Crock Plant-based butter sticks for butter.
