Infused Cranberry Orange Juice Cake

December has finally arrived! I hope this month finds you taking things in stride, going with the flow, and giving back where you can. That's kind of how this recipe came to being: vendors giving back. I happened to get some samples of SIP Elixir at the Errl Cup and I bet some of you did too. This month's recipe uses a lot of orange juice, so it's pretty nice to substitute with SIP Elixirs, especially since it won't replace all the OJ. Ever wondered if there's any other way to use the elixir, other than the expected way of drinking it? Well, there is; you can use SIP Elixir in place of the liquid in your recipe and bake with it. For this recipe I used the Watermelon flavor, though I feel any of the flavors would blend well with this recipe. At 100mg THC per bottle, this makes for a low dose edible, which makes it perfect for those holiday get-togethers. Now get yourself to your nearest dispensary and grab a few bottles. Yield: 20 - 5mg slices

Prep Time: 15 minutes

Tools to make this recipe: measuring cups/spoons, measuring bowls, 1 bundt pan, saucepan, rubber spatula, whisk, knife, cutting board


Ingredients

  • 2 ½ cups AP Flour

  • 1 ½ cups Sugar

  • 1 cup Vegetable oil

  • 4 large Eggs, room temperature 

  • 1 bottle Sip Elixers, 100mg, 1.75oz 

  • 1 tsp Vanilla Extract 

  • 1 tsp Pumpkin spice

  • 3 tsp Baking powder 

  • 1 tsp Salt

  • 2/3 cup Orange juice 


Instructions

  1. The medication. Think about how medicated each piece will be. This recipe calls for 1 - 100mg THC bottle of SIP Elixir; choose whichever flavor sounds best to you. If you cut the cake into 20 pieces, each piece ends up being 5mg THC. 

  2. The glaze. For an extra orange oomph, make a glaze using ⅓ cup Orange juice to ⅓ cup sugar, bring to boil in a saucepan. Cool.

  3. The cake. Turn the oven to 350°F. Prepare your bundt pan by smearing oil or butter on it. Measure all of your ingredients. In a large bowl, mix together the sugar and oil, followed by the eggs, vanilla extract, and SIP Elixir. Mix thoroughly as this is where you fully combine the meds with the cake batter. In a separate bowl, mix together the flour, baking powder, pumpkin spice, and salt. Add the dry mix to the wet mix until just mixed, then add the orange juice. Once combined, mix in cranberries and pour into your prepared bundt pan. Bake for 40-50 minutes, til a toothpick comes out clean. Cool cake and turn out of pan. Drizzle with orange glaze, if desired and allow to dry. Then garnish with powdered sugar just before serving.

Notes:

Non-medicated: substitute in orange juice for SIP Elixir.

Gluten free: substitute in 1:1 gluten free flour
