One of the mainstays of the cocktail and mixology world is the simple syrup. There are just so many different ways to change up subtle flavors inherent in a mixed drink. The simple syrup is one of the easiest to produce well. I like to use complex tasting sugar, like Demerara in my simple syrup. There is a certain funk in this sugar which can be substituted by brown sugar, but in my opinion, brown sugar cannot compete in a drink. Brown sugar tends to be too assertive in a craft cocktail, too bitter in my opinion. If you want a dark simple syrup, just simmer the sugar and water together for a longer period of time. It will take on a darker color, as if by osmosis!
1 cup filtered water
1 cup Demerara sugar
4-6 grams decarbed cannabis of the finest kind (finely ground)
1 Tablespoon vegetarian lecithin (brain food, supercharges your absorption of the THC
Simmer all the ingredients at 160 degrees F. for at least thirty minutes to infuse and activate your simple syrup.
Let cool and store in the refrigerator for a week at most.
***You can add a knob of a ginger root when you’re simmering the syrup to make a spicy ginger syrup. It’s easy and you can make bourbon or mezcal mule cocktails that will get you and all your friends really stoned.
