Infused Avocado Cilantro Lime Salad | Cannabis Recipe

This Infused Avocado Cilantro Lime Salad is perfect for lunch time in the summer and can be easily customized! I like to put all my vegetables in the fridge so when I serve them they’re nice and fresh and cold.


2 Avocados 2 Corn cobs grilled 1 head romaine lettuce 1 whole red onion I block cheddar cut into cubes 1 cup canna-olive oil 1 whole lime – just the juice ¾ cup white vinegar 1 handful cilantro 2 chicken breasts (optional) Adobo seasoning for chicken

Ingredients for Infused Avocado Cilantro Lime Salad


I start by grilling the corn and chicken, seasoned with salt, pepper and adobo. Turn meat on the grill half way on each side to get criss cross grill marks. Once everything is grilled let it cool and cut the corn off the cob and slice the chicken and store in the fridge. Meanwhile, slice your avocados carefully and dice them medium dice. Sprinkle with salt and a splash of lime juice to prevent browning. Coarse chop the romaine and add to salad bowl. On top, put pile of small diced red onions, then medium diced avocado, medium diced cheddar cheese, grilled corn, and then the sliced  chicken! The vinaigrette is super simple and easy! Take a small bunch of cilantro and finely chop it, then add to a bowl and squeeze the juice of one whole lime into the bowl, then the vinegar. Slowly drizzle the canna-olive oil while whisking to make the dressing come together! Drizzle dressing over the salad and toppings or serve on the side.
