Cannabis-Infused Oatmeal Cookies
The weather is getting nice and it’s time to start planning those hiking excursions and BBQs with friends. What's better than an afternoon with friends, eating a chocolate-filled oatmeal cookie? It’s a little crunchy on the outside with a thin layer of gooey chocolate on the inside. This is such a delicious cookie! They’re large 2 oz. cookies, so they’re big enough to tuck a piece of Canna Confections chocolate in the middle… it’s exactly the perfect amount, for sharing or not. You could make these cookies for a party and need about 1-2 bars to feed the whole room a couple of times over. Don’t delay now; head on over to your favorite dispensary and get your Canna Confections chocolate bars. I used dark chocolate, but that choice is entirely up to you! Enjoy your cookies!
Yield: 27, 2 oz cookies, 24 - 15mg cookies & 3 non-medicated cookies
Prep Time: 20 minutes
Tools to make this recipe: mixer, measuring cups, measuring spoons, scale, spatula, bowls, whisk.
Ingredients
227g Butter
454g Brown Sugar
6g Salt
28g Milk
113g Eggs
6g Vanilla extract
340g AP Flour
340g Rolled Oats
8g Baking Soda
14g Baking Powder
200g Chocolate Chips
4 bars Canna Confections Chocolate Bar, 100mg
Instructions
Think how medicated you would like each cookie to be. This recipe makes 27 cookies, using 4 - 100mg Canna Confections chocolate bars, that equals just under 15 mg per cookie. Consider if that dosage is right for you; if you’d like you can break the chocolates in half or use double to increase the dosage to 30 mg per cookie, replace the same amount of non-medicated chocolate for the same amount of medicated chocolate. Just make sure you write down any changes. You can also easily break the recipe down into half or quarter size for 14 or 7 cookies respectively, just remember to keep your numbers straight for dosing.
Cream together the butter, brown sugar, and salt until well combined. Next add the eggs, one at a time, then the milk and vanilla. Mix well. Whisk together the dry ingredients, flour, oats, baking soda, baking powder, and chocolate chips together and add to the mixing bowl. Mix until all flour is incorporated into batter. Wait 10 minutes before portioning. Portion the cookies and cut in half like a roll, so you have a top and bottom half. Break chocolate bars into pieces and fit into the middle of the cookies. Then sandwich the top and bottom together, making sure the cookie is sealed all the way around. Bake for 10-15 minutes til golden on top.
Relax and enjoy!
Notes:
Dairy-free: Substitute Country Crock Plant Cream for the milk.
